ITALIAN RESTAURANT ‘TUTTO’ NOW OPEN IN BRIGHTON

Tutto – the new Italian restaurant from acclaimed restaurateur Razak Helalat of Brighton’s The Coal Shed, The Salt Room and Burnt Orange – is now officially open in Brighton after an initial soft launch in September. An anticipated addition to Helalat’s Brighton family, Tutto – meaning all – is inspired by the traditional Italian dining culture that focuses on simple quality and the Italian experience in equal measure. The opening marks the beginning of an exciting few months for Helalat’s Black Rock Restaurants Group, as the company looks to cement its reputation in the Brighton food scene.
Set in a beautifully restored 1930s former bank on Marlborough Place, Tutto is the first Italian venture from Helalat and will honour his ethos for the restaurant of ‘bring everyone, eat everything’ through both hospitality and well-sourced, high quality seasonal food from Head Chef Thomas Catley. The restaurant encourages friends and family to come together to drink and share hearty dishes in an ideal setting for both noon and evening.
In true Italian tradition, the menu at Tutto starts with Cicchetti – including Lasagna Crocchetta and Bone Marrow with parmesan, gremolata and toast – followed by classic Italian Antipasti, Primi and Secondi dishes that put good quality, simple ingredients at the forefront. From a modern twist on Roman Cacio e Pepe, to Bologna-inspired Pappardelle with Slow Braised Beef Shin and Veal Osso Bucco originating from Northern Italy’s Lombard cuisine, the menu explores the regional cuisines and cooking traditions of Italy. Guests can expect dishes such as:

Potato Gnocchi, Cacio e Pepe, Black Truffle
Tagliolini, Cornish Crab, Chilli, Bottarga

Delica Pumpkin, Tenderstem, Pomegranate, Kale & Pistachio Pesto
“Taste of Tutto” – a sharing set menu designed to showcase the restaurant’s highlights – is also available to order, especially-curated by the kitchen team for diners looking to leave the selection in expert hands.
As for drinks, Tutto is home to a 90-bottle wine list covering the breadth of Italy, alongside a carefully crafted menu of cocktails including Ananas Affumicato made with Mezcal Verde, Galliano and spiced charred pineapple. In true Italian-style, a separate menu of Negronis is also on offer, from classics to the more unusual Café Negroni, made with Tanqueray Gin, Campari, Antica Formula and Café Borgetti. Guests can also enjoy drinks and bar snacks from aperitivo through to digestivo at Tutto’s crescent-shaped bar.
The 70-cover restaurant is set in a grade II-listed building where many of the original Neo Georgian features have been kept and restored to create an informal dining space full of personality. The bank’s reclaimed features are contrasted by contemporary elements: local artists’ paintings will adorn the walls, chandeliers will hang from the bank’s restored high ceilings, greenery will surround velvet-banquette seats with marble table tops and the original ground has been resurfaced with parquet flooring. A further 30 covers can be found outside on the Mediterranean-influenced al fresco terrace, enfolded by lush greenery and covered with a sage green and champagne striped awning – ready for diners to enjoy an al fresco dinner or evening aperitivo this autumn. A small, intimate outdoor garden can also be found at the rear of the restaurant, seating 18 guests.
With more plans in the pipeline, including a brand new concept in the seaside capital and a new direction for Brighton’s The Coal Shed, Tutto offers an exciting next step for Helalat and his restaurant portfolio.
